In the form Interface when I want to select a value from another table (linked record) I only see the name of the first column.
How can I see more data on this field?

+31Interface forms only display the primary field at this time I'm afraid. You could try working around this by making the primary field a formula field that concats all the data you want the user to see together
You could also try Fillout.com's forms too as I believe they come with the functionality you want
