For my interface I want a grid view meant for people within my organization with all the fields visible and I want another view of said interface meant for external organizations that only show some of the fields.
How do i go about this?

Hm, I think you're going to either need to create a new page or a new Interface for that I'm afraid
You can’t create a new page because all pages are visible by the people who have access to that interface.
So you would need to create a new interface and create your additional pages there.
