I've actually tackled something similar using a combo of Node.js scripts and the CCXT library, which supports most major exchanges and their APIs. The beauty of CCXT is that it standardizes all the different exchange APIs into one consistent format, making it super easy to pull data from multiple sources. You could set up a simple server that fetches your data every couple minutes and pushes it directly to Airtable using their API - I've got this running for about 50 pairs and it costs me practically nothing (just my $5/month DigitalOcean droplet). For 2000 cryptos you might need to be careful about rate limits, but you could stagger the requests or just batch them intelligently.
