Grid columns are coloured when they are subject to a sort (pink) or filter (green). However, I would like to colour columns myself - e.g. to show other users that data entry is required for that field - purely a cosmetic change to the view. Is this possible?

Unfortunately, this is not possible, but it would be an amazing addition to the product. I would email your idea as a feature request to support@airtable.com, and I will also move your post into the #show-and-tell:product-suggestions category.
