there is a dose of dopamine when you see something complete, a reaction an emoticon or a crossing out of the task would help people know that something is being completed and is moving forward

How does is solve the user problems?

improves motivation and quick review of completed and pending tasks

crossing out tasks or subtasks if the user chooses to do so

Who is the target audience?

all users or airtable, specific users: managers, teams, project leads

Yes, I've gone looking to do this using automations (or otherwise) and found this suggestion. 

It would solve a problem for us to be able to add strikethrough to mark tasks as completed.

In fact, changing the font colour, background and style we would also use.
