According to https://support.airtable.com/docs/airtable-sync-integration-zendesk, automatic syncing happens around every 5 mins. But from my experience, it is around 10 mins. Is there anything to do to decrease it to 5 mins?

Unfortunately, you cannot control that. The only other option would be to build from scratch your own custom syncing process with ZenDesk using Make's ZenDesk integrations, and you can actually have the new and/or updated tickets come into Airtable INSTANTLY — so even quicker than 5 minutes!
