The questions really says it all. With the desktop Airtable app, are databases stored on the local computer (Mac, in my case) or only online?

Actually, if you care about the security and safe storage of your data, you will not store it locally. The likelihood of your local system being hacked is vastly greater than a SaaS provider with SOC 2 compliance. Or, maybe I’ve not estimated your situation and you have created a local desktop with this environment.
