When sending my metadata in media platforms (such as Whatsapp, Facebook, Teams etc.) I see the metadata and thumbnail of Airtable.com company (attaching a photo). Is there a way to customize it so when I share my airtable URL people will see a different metadata?

Currently no . The only way to get your logo in there would be if you shared by sending an email, in which case you can embed your logo into the email through automations.
