Is there a way to have a default field that notes the date/time when someone submits a form, without adding it as a field that a person manually fills out?

Yes - make a “Created Time” field:
When the user submits the form, it will create the record, and the “Created time” field will auto-fill with the date/time the record was made (ie, the date/time the form was submitted).

That’s so funny, I’ve been using the formula for the same thing, I’ve been having so much fun exploring them I looked for that first before I looked for field type option.
Thank you, I got excited for a minute and then tried to go into the form I had created and that's not an option. Is it because we've already started capturing responses, maybe?
Is there any other way to see when a person submitted their response?
