Gmail to Airtable. Fill cells with part of an email text

Hi there, i want to fill Airtable boxes with part of an email text, i will receive emails in this format:

"Hi user, a customer has sent you an application form

Name: Adele
Phone number: 123
Date: 01/01/01"

I did a setup from Gmail to Airtable with Zapier, but it copy all the text in one Airtable box, and i just want the detailes part of the form that i wrote in Bold and Italic just for make a database with my customers.

Can I make this someway?
