Is it possible to pull backend Task dates?

I am evaluating productivity of another team in AirTable. The team in question enters their projects and tasks into AirTable, however many Task start dates were not entered by users. Is it possible to export the date each task was entered to AirTable in a fairly simple way, or is it impossible to collect that data retroactively without already having an API set up?

There is a field for created date you can add to the table. Just add a new field and field type created date

You can use a created time field to see when each record was created.
