Today I shared an airtable link with a filtered view, I made adjustments throughout the day, and all of a sudden it stopped allowing me to make adjustments to individual cells. What happened?

I would say that whomever shared the table with you changed your collaboration level to view only? If you go to your shared bases workspace and click on the number indicating the collaborators you can check your access level.
