UUIDv7 doesn't sort correctly

I have a text field which I’m manually populating with UUIDv7s. This string is time-ordered by the first sequence of characters.

When sorting A-Z on this column, I’d expect that to happen. It isn’t. These two entries sort in this order.

What am I missing?

That’s….really weird. I was able to replicate it like so:

Update: I’ve had a bunch of back and forth with support about this and haven’t been able to get an explanation yet. Will keep trying!
