Compounding multiple Workspaces?

If we have several very different projects, as well as divisions of business, (ie custom homes project 1, 2, 3, ect. business division 1, 2) is it best to set up different workspaces for each one or simply 1 massive workspace? And if they are each individual, do we have the ability to view everything together when needed?
